Ingredients:
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs, room temperature
- 2 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 cups butterscotch chips
Instructions:
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a large bowl, beat the softened butter, brown sugar, and granulated sugar on medium high until the mixture is pale, fluffy, and looks like wet sand.
- Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- In a separate small bowl, whisk together the flour, baking soda, and salt.
- Slowly add the dry flour mixture to the wet ingredients, mixing on low speed until just combined and no flour streaks remain.
- Gently fold in the butterscotch chips by hand using a spatula.
- Scoop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches of space between them.
- Bake for 10 minutes.
