Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 2 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups butterscotch chips

Instructions:

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter, brown sugar, and granulated sugar on medium high until the mixture is pale, fluffy, and looks like wet sand.
  3. Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  4. In a separate small bowl, whisk together the flour, baking soda, and salt.
  5. Slowly add the dry flour mixture to the wet ingredients, mixing on low speed until just combined and no flour streaks remain.
  6. Gently fold in the butterscotch chips by hand using a spatula.
  7. Scoop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches of space between them.
  8. Bake for 10 minutes.
