Ingredients:
- 2 cups (280g) fresh strawberries, finely diced
- 2 tbsp (25g) granulated sugar
- 1 tsp (5ml) lemon juice
- 3 cups (360g) super-fine blanched almond flour
- 1/2 cup (60g) coconut flour
- 1 tsp (5g) baking powder
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) fine sea salt
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 3 large eggs, room temperature
- 1/2 cup (120g) full-fat sour cream
- 1 tsp (5ml) pure vanilla extract
- 1 cup (225g) unsalted butter, softened
- 3 cups (360g) powdered sugar
- 1 tbsp (15ml) heavy cream
Instructions:
- Place diced strawberries, 2 tbsp sugar, and lemon juice in a saucepan over medium-high heat. Simmer for 8–10 minutes, stirring frequently, until the mixture thickens into a jam-like consistency. Set aside to cool.
- Cream the softened butter (115g) and 150g granulated sugar together until pale and fluffy (about 3 minutes).
- Beat in the eggs one at a time, then stir in the sour cream and vanilla extract.
- In a separate bowl, sift together the blanched almond flour, coconut flour, baking powder, baking soda, and salt.
- Gradually incorporate the dry ingredients into the butter mixture, then fold in 1/2 cup of the prepared strawberry reduction.
- Pour batter into an 8-inch springform pan lined with parchment paper and bake for 40 minutes or until a toothpick comes out clean.
- Prepare frosting by beating 225g softened butter and powdered sugar until smooth, then mixing in the remaining strawberry reduction and heavy cream.
- Frost the cooled cake evenly and slice into 14 pieces.
