Ingredients:
- 16 oz imitation crab meat, diced or shredded
- 2 stalks celery, finely diced
- 1/4 cup red onion, minced
- 2 tbsp fresh parsley, chopped
- 1/4 cup mayonnaise
- 1/4 cup plain Greek yogurt
- 1 tbsp fresh lemon juice
- 1/2 tsp Old Bay seasoning
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions:
- Finely dice the celery and red onion. Place them on a paper towel and pat firmly to remove surface moisture.
- In a large mixing bowl, combine the mayonnaise, Greek yogurt, lemon juice, Old Bay, salt, and pepper. Stir until the mixture is velvety and seasonings are evenly distributed.
- Add the diced crab, dried celery, and red onion to the bowl. Gently fold the ingredients together until the seafood is fully coated.
- Stir in the fresh parsley last to maintain its vibrant color.
