Ingredients:

  • 16 oz imitation crab meat, diced or shredded
  • 2 stalks celery, finely diced
  • 1/4 cup red onion, minced
  • 2 tbsp fresh parsley, chopped
  • 1/4 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 1 tbsp fresh lemon juice
  • 1/2 tsp Old Bay seasoning
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Finely dice the celery and red onion. Place them on a paper towel and pat firmly to remove surface moisture.
  2. In a large mixing bowl, combine the mayonnaise, Greek yogurt, lemon juice, Old Bay, salt, and pepper. Stir until the mixture is velvety and seasonings are evenly distributed.
  3. Add the diced crab, dried celery, and red onion to the bowl. Gently fold the ingredients together until the seafood is fully coated.
  4. Stir in the fresh parsley last to maintain its vibrant color.
