Ingredients:
- 1 lb crab meat
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 3 stalks green onions, thinly sliced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh lemon juice
Instructions:
- Drain the crab meat and pat it dry with paper towels to ensure proper searing.
- Mince the garlic and slice the green onions, keeping the white bottoms and green tops separate.
- Place a skillet over medium-high heat and add the olive oil and 1 tablespoon of butter.
- Once the butter foams, sauté the minced garlic and the white parts of the green onions for 1 minute until fragrant.
- Increase the heat slightly and add the crab meat in an even layer. Let it sit undisturbed for 2-3 minutes until the edges are mahogany-colored.
- Gently flip the meat and add the remaining 1 tablespoon of butter, stirring gently to coat the crab.
- Sprinkle in the salt and black pepper.
- Pour in the fresh lemon juice to deglaze the pan, scraping up the browned bits.
- Stir in the green parts of the onions and remove from heat immediately.
