Ingredients:

  • 1 lb crab meat
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 3 stalks green onions, thinly sliced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh lemon juice

Instructions:

  1. Drain the crab meat and pat it dry with paper towels to ensure proper searing.
  2. Mince the garlic and slice the green onions, keeping the white bottoms and green tops separate.
  3. Place a skillet over medium-high heat and add the olive oil and 1 tablespoon of butter.
  4. Once the butter foams, sauté the minced garlic and the white parts of the green onions for 1 minute until fragrant.
  5. Increase the heat slightly and add the crab meat in an even layer. Let it sit undisturbed for 2-3 minutes until the edges are mahogany-colored.
  6. Gently flip the meat and add the remaining 1 tablespoon of butter, stirring gently to coat the crab.
  7. Sprinkle in the salt and black pepper.
  8. Pour in the fresh lemon juice to deglaze the pan, scraping up the browned bits.
  9. Stir in the green parts of the onions and remove from heat immediately.
