Ingredients:

  • 1 lb lump crab meat
  • 1 tbsp fresh lemon juice
  • 1/2 cup celery, finely diced
  • 1/2 cup English cucumber, peeled and seeded, finely diced
  • 2 tbsp fresh parsley, minced
  • 1/3 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1/2 tsp smoked paprika
  • 1/4 tsp Old Bay seasoning
  • 1 tbsp fresh lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Place the crab meat in a fine-mesh strainer and gently pat dry with a paper towel.
  2. Drizzle the crab with 1 tbsp of lemon juice to neutralize scents and brighten the flavor, then set aside in a chilled bowl.
  3. In a separate small bowl, combine the mayonnaise, Dijon mustard, smoked paprika, Old Bay, 1 tbsp lemon juice, salt, and pepper.
  4. Whisk the dressing vigorously until the mixture is a uniform, pale orange color and velvety.
  5. Add the diced celery and seeded cucumber to the chilled crab meat.
  6. Pour the prepared dressing over the crab and vegetable mixture.
  7. Using a silicone spatula, gently fold the ingredients from the bottom up until just coated.
  8. Fold in the minced parsley last to maintain its vibrant green color.
