Ingredients:
- 1 lb (450g) imitation crab meat, chopped into ½ inch pieces
- 2 stalks (100g) celery, finely diced
- ¼ cup (40g) red onion, minced
- 2 tbsp (10g) fresh parsley, chopped
- ¼ cup (60g) mayonnaise
- ¼ cup (60g) plain Greek yogurt
- 1 tbsp (15ml) fresh lemon juice
- ½ tsp (1g) smoked paprika
- ¼ tsp (1.5g) salt
- ¼ tsp (1g) cracked black pepper
Instructions:
- Dice the imitation crab, celery, and red onion into uniform pieces roughly the size of a pea and place them in a chilled mixing bowl.
- In a separate small bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, smoked paprika, salt, and pepper until the dressing is velvety.
- Pour the dressing over the seafood mixture and gently fold the ingredients together using a spatula until every piece is evenly coated.
