Ingredients:

  • 1 lb (450g) imitation crab meat, chopped into ½ inch pieces
  • 2 stalks (100g) celery, finely diced
  • ¼ cup (40g) red onion, minced
  • 2 tbsp (10g) fresh parsley, chopped
  • ¼ cup (60g) mayonnaise
  • ¼ cup (60g) plain Greek yogurt
  • 1 tbsp (15ml) fresh lemon juice
  • ½ tsp (1g) smoked paprika
  • ¼ tsp (1.5g) salt
  • ¼ tsp (1g) cracked black pepper

Instructions:

  1. Dice the imitation crab, celery, and red onion into uniform pieces roughly the size of a pea and place them in a chilled mixing bowl.
  2. In a separate small bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, smoked paprika, salt, and pepper until the dressing is velvety.
  3. Pour the dressing over the seafood mixture and gently fold the ingredients together using a spatula until every piece is evenly coated.
