Ingredients:

  • 4 cups (500g) bread flour
  • 1 cup (240ml) warm milk
  • 2 ¼ tsp (7g) active dry yeast
  • ½ cup (115g) unsalted butter, softened
  • ½ cup (120g) pumpkin puree
  • ⅓ cup (65g) granulated sugar
  • 1 large egg, room temperature
  • 1 tsp (6g) salt
  • 1 tsp (2g) pumpkin pie spice
  • ½ cup (115g) unsalted butter, very soft
  • 1 cup (200g) brown sugar, packed
  • 2 tbsp (16g) ground cinnamon
  • 1 tbsp (8g) pumpkin pie spice
  • 8 oz (225g) full-fat cream cheese, softened
  • ¼ cup (55g) unsalted butter, softened
  • 2 cups (240g) powdered sugar
  • 1 tsp (5ml) vanilla extract
  • 2 tbsp (30ml) heavy cream

Instructions:

  1. Bloom the yeast by combining warm milk and a pinch of sugar in a mixer bowl. Sprinkle yeast on top and let sit for 5-10 minutes until foamy.
  2. Add the softened butter, pumpkin puree, remaining sugar, egg, and pumpkin pie spice to the yeast mixture. Mix on low until smooth.
  3. Gradually add bread flour and salt. Using the dough hook, mix on medium-low until the dough pulls away from the sides of the bowl.
  4. Knead the dough for 5-7 minutes until smooth and elastic.
  5. Place dough in a greased bowl, cover, and let rise in a warm place for 2 hours until doubled in size.
  6. Roll out the dough into a rectangle. Spread the softened filling butter, then sprinkle with brown sugar, cinnamon, and pumpkin pie spice.
  7. Roll the dough tightly into a log and cut into 12 equal pieces. Place in a 9x13 inch baking pan.
  8. Bake for 25 minutes or until golden brown.
  9. Whisk together cream cheese, butter, powdered sugar, vanilla, and heavy cream until smooth. Frost the rolls while warm.
