Ingredients:
- 4 cups (500g) bread flour
- 1 cup (240ml) warm milk
- 2 ¼ tsp (7g) active dry yeast
- ½ cup (115g) unsalted butter, softened
- ½ cup (120g) pumpkin puree
- ⅓ cup (65g) granulated sugar
- 1 large egg, room temperature
- 1 tsp (6g) salt
- 1 tsp (2g) pumpkin pie spice
- ½ cup (115g) unsalted butter, very soft
- 1 cup (200g) brown sugar, packed
- 2 tbsp (16g) ground cinnamon
- 1 tbsp (8g) pumpkin pie spice
- 8 oz (225g) full-fat cream cheese, softened
- ¼ cup (55g) unsalted butter, softened
- 2 cups (240g) powdered sugar
- 1 tsp (5ml) vanilla extract
- 2 tbsp (30ml) heavy cream
Instructions:
- Bloom the yeast by combining warm milk and a pinch of sugar in a mixer bowl. Sprinkle yeast on top and let sit for 5-10 minutes until foamy.
- Add the softened butter, pumpkin puree, remaining sugar, egg, and pumpkin pie spice to the yeast mixture. Mix on low until smooth.
- Gradually add bread flour and salt. Using the dough hook, mix on medium-low until the dough pulls away from the sides of the bowl.
- Knead the dough for 5-7 minutes until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise in a warm place for 2 hours until doubled in size.
- Roll out the dough into a rectangle. Spread the softened filling butter, then sprinkle with brown sugar, cinnamon, and pumpkin pie spice.
- Roll the dough tightly into a log and cut into 12 equal pieces. Place in a 9x13 inch baking pan.
- Bake for 25 minutes or until golden brown.
- Whisk together cream cheese, butter, powdered sugar, vanilla, and heavy cream until smooth. Frost the rolls while warm.
