Ingredients:
- 2 cups old fashioned rolled oats
- 0.5 cup ground flaxseed
- 0.5 cup unsweetened shredded coconut
- 1 tbsp chia seeds
- 0.25 tsp sea salt
- 1 cup creamy peanut butter
- 0.5 cup honey
- 1 tsp pure vanilla extract
- 0.5 cup mini semi-sweet chocolate chips
Instructions:
- In your large mixing bowl, combine the 2 cups rolled oats, 0.5 cup ground flaxseed, 0.5 cup shredded coconut, 1 tbsp chia seeds, and 0.25 tsp sea salt. Note: Mixing the dry ingredients first prevents clumps of flax or salt in the finished bites.
- Toss the dry mixture with a spatula until the flax and chia are evenly distributed.
- Add the 1 cup creamy peanut butter, 0.5 cup honey, and 1 tsp vanilla extract directly into the center of the dry ingredients.
- Stir the mixture thoroughly with your stiff spatula until the oats are fully hydrated and a sticky, cohesive dough forms.
- Gently fold in the 0.5 cup mini chocolate chips until they are evenly dispersed throughout.
- Cover the bowl and place it in the refrigerator to chill for 30 minutes. Note: This step is non negotiable; it's what allows the oats to absorb the liquids so the bites don't fall apart.
- After 30 minutes, remove the bowl and use your cookie scoop to portion out 1 inch mounds.
- Roll each portion between your palms until a smooth, round sphere is formed.
- Place the finished bites into an airtight container, layering them with parchment paper if you're stacking them.
