Ingredients:
- 1 cup (250g) creamy almond butter
- 1/2 cup (170g) honey
- 1/4 cup (55g) melted coconut oil
- 1 tsp (5ml) vanilla extract
- 2 cups (180g) rolled oats
- 1/4 cup (30g) chia seeds
- 1/2 cup (90g) dark chocolate chips
- 1 tbsp (15g) coconut oil
- 1/2 tsp (3g) flaky sea salt
Instructions:
- Line an 8x8 inch square baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a large bowl, combine the almond butter, honey, melted coconut oil, and vanilla extract. Stir vigorously until the mixture is glossy and completely combined.
- Fold in the rolled oats and chia seeds using a spatula until no dry streaks remain.
- Press the mixture firmly into the bottom of the prepared pan using a spoon or flat spatula to create an even surface.
- In a microwave-safe bowl, combine dark chocolate chips and 1 tbsp coconut oil. Heat in 30-second bursts, stirring in between, until fluid.
- Pour the melted chocolate over the almond base and tilt the pan to spread it into an even layer. Sprinkle with flaky sea salt.
- Chill in the refrigerator for 45 minutes (or freezer for 20 minutes) until the bars are set.
