Ingredients:
- 1 lb (450g) imitation crab meat, flaked or chopped
- ½ cup (60g) celery, finely diced
- ¼ cup (30g) red onion, minced
- 2 tbsp (8g) fresh parsley, chopped
- ⅓ cup (80g) non-fat plain Greek yogurt
- 1 tbsp (15g) low-fat mayonnaise
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (5ml) Dijon mustard
- ½ tsp (3g) salt
- ¼ tsp (1g) black pepper
- ¼ tsp (1g) paprika
Instructions:
- Flake the imitation crab into bite-sized chunks. In a large mixing bowl, combine the crab, diced celery, and minced red onion.
- In a separate small bowl, whisk together the Greek yogurt, low-fat mayonnaise, lemon juice, Dijon mustard, salt, pepper, and paprika until smooth.
- Pour the dressing over the crab mixture and gently fold the ingredients together until evenly coated, ensuring the crab chunks remain intact.
