Ingredients:

  • 1 lb (450g) imitation crab meat, flaked or chopped
  • ½ cup (60g) celery, finely diced
  • ¼ cup (30g) red onion, minced
  • 2 tbsp (8g) fresh parsley, chopped
  • ⅓ cup (80g) non-fat plain Greek yogurt
  • 1 tbsp (15g) low-fat mayonnaise
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tsp (5ml) Dijon mustard
  • ½ tsp (3g) salt
  • ¼ tsp (1g) black pepper
  • ¼ tsp (1g) paprika

Instructions:

  1. Flake the imitation crab into bite-sized chunks. In a large mixing bowl, combine the crab, diced celery, and minced red onion.
  2. In a separate small bowl, whisk together the Greek yogurt, low-fat mayonnaise, lemon juice, Dijon mustard, salt, pepper, and paprika until smooth.
  3. Pour the dressing over the crab mixture and gently fold the ingredients together until evenly coated, ensuring the crab chunks remain intact.
