Ingredients:
- 1 lb (450g) imitation crab meat, shredded or chopped
- 3 stalks (100g) celery, finely diced
- 3 tbsp (45g) red onion, minced
- 2 tbsp (15g) fresh parsley, chopped
- 1 tbsp (15g) fresh chives, snipped
- 1/4 cup (60ml) light mayonnaise
- 2 tbsp (30ml) Greek yogurt (plain, non-fat)
- 1 tbsp (15ml) fresh lemon juice
- 1/2 tsp (2.5g) celery seed
- 1/4 tsp (1.25g) paprika
- 1/2 tsp (3g) salt
- 1/4 tsp (1.25g) black pepper
Instructions:
- Finely dice the celery and red onion. Shred the imitation crab by hand or chop with a knife into irregular pieces. Place the crab, celery, onion, and herbs into a large mixing bowl.
- In a separate small bowl, whisk together the light mayonnaise, Greek yogurt, lemon juice, celery seed, paprika, salt, and pepper until the mixture is smooth and the paprika is evenly distributed.
- Pour the dressing over the crab mixture and gently fold with a silicone spatula until the seafood is evenly coated, taking care not to over-mix.
