Ingredients:

  • 1 lb (450g) imitation crab meat, shredded or chopped
  • 3 stalks (100g) celery, finely diced
  • 3 tbsp (45g) red onion, minced
  • 2 tbsp (15g) fresh parsley, chopped
  • 1 tbsp (15g) fresh chives, snipped
  • 1/4 cup (60ml) light mayonnaise
  • 2 tbsp (30ml) Greek yogurt (plain, non-fat)
  • 1 tbsp (15ml) fresh lemon juice
  • 1/2 tsp (2.5g) celery seed
  • 1/4 tsp (1.25g) paprika
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1.25g) black pepper

Instructions:

  1. Finely dice the celery and red onion. Shred the imitation crab by hand or chop with a knife into irregular pieces. Place the crab, celery, onion, and herbs into a large mixing bowl.
  2. In a separate small bowl, whisk together the light mayonnaise, Greek yogurt, lemon juice, celery seed, paprika, salt, and pepper until the mixture is smooth and the paprika is evenly distributed.
  3. Pour the dressing over the crab mixture and gently fold with a silicone spatula until the seafood is evenly coated, taking care not to over-mix.
