Ingredients:

  • 1 lb (450g) Kielbasa sausage, sliced into ½-inch rounds
  • 1 lb (450g) Yukon Gold potatoes, cut into ¾-inch cubes
  • 2 cups (150g) Red bell pepper, chopped into 1-inch pieces
  • 1 cup (150g) Red onion, cut into thick wedges
  • 2 cups (180g) Broccoli florets
  • 3 tbsp (45ml) Extra virgin olive oil
  • 1 tsp (2g) Garlic powder
  • 1 tsp (2g) Smoked paprika
  • ½ tsp (3g) Salt
  • ½ tsp (1g) Black pepper
  • ¼ tsp (1g) Red pepper flakes

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, toss the sliced kielbasa, cubed potatoes, peppers, onions, and broccoli with the olive oil, garlic powder, smoked paprika, salt, black pepper, and red pepper flakes until every piece is glossy and evenly coated.
  3. Spread the mixture across the sheet pan in a single layer to ensure roasting rather than steaming.
  4. Roast for 25-30 minutes, using a spatula to toss the ingredients halfway through.
  5. Remove from the oven once the potatoes are fork-tender, the kielbasa is deep mahogany brown with charred edges, and the broccoli tips are crisp.
  6. Let the pan rest for 5 minutes to allow juices to redistribute before serving.
