- 1 tbsp fresh chives, snipped
- 1/2 cup non-fat Greek yogurt
- 1 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1/2 tsp honey
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp Old Bay seasoning
Instructions:
- Dice the imitation crab into small, uniform pieces. Finely mince the celery and red onion, then place all three ingredients in a large mixing bowl.
- In a separate small bowl, whisk together the Greek yogurt, lemon juice, Dijon mustard, honey, salt, and pepper until smooth and velvety.
- Pour the yogurt dressing over the crab mixture and gently fold together using a rubber spatula to maintain the structural integrity of the seafood.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to fuse and the dressing to thicken.
