Ingredients:

  • 12 oz surimi (imitation crab sticks), shredded or diced
  • 1 tbsp fresh lemon juice
  • 1/2 cup celery, finely diced
  • 1/4 cup red onion, minced
  • 1/4 cup carrots, shredded
  • 2 tbsp fresh parsley, chopped
  • 1/3 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1/2 tsp Old Bay seasoning
  • 1/4 tsp salt
  • 1/4 tsp cracked black pepper

Instructions:

  1. Shred the surimi sticks using a fork to pull them into thin strands or pulse briefly in a food processor. Place the surimi in a large bowl and toss with the fresh lemon juice.
  2. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, Old Bay seasoning, salt, and pepper until the mixture is a uniform color and fully incorporated.
  3. Add the diced celery, red onion, carrots, and parsley to the surimi. Pour the creamy dressing over the top and gently fold the ingredients together using a rubber spatula until evenly coated.
