Ingredients:
- 12 oz surimi (imitation crab sticks), shredded or diced
- 1 tbsp fresh lemon juice
- 1/2 cup celery, finely diced
- 1/4 cup red onion, minced
- 1/4 cup carrots, shredded
- 2 tbsp fresh parsley, chopped
- 1/3 cup mayonnaise
- 1 tsp Dijon mustard
- 1/2 tsp Old Bay seasoning
- 1/4 tsp salt
- 1/4 tsp cracked black pepper
Instructions:
- Shred the surimi sticks using a fork to pull them into thin strands or pulse briefly in a food processor. Place the surimi in a large bowl and toss with the fresh lemon juice.
- In a separate small bowl, whisk together the mayonnaise, Dijon mustard, Old Bay seasoning, salt, and pepper until the mixture is a uniform color and fully incorporated.
- Add the diced celery, red onion, carrots, and parsley to the surimi. Pour the creamy dressing over the top and gently fold the ingredients together using a rubber spatula until evenly coated.
