Ingredients:

  • 1 lb imitation crab meat, chopped into ½-inch pieces
  • ½ cup celery, finely diced
  • 3 tbsp red onion, minced
  • 2 tbsp fresh parsley, chopped
  • ½ cup mayonnaise
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • ½ tsp paprika
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions:

  1. Pat the imitation crab meat thoroughly with paper towels to remove excess brine. Chop the meat into uniform ½-inch pieces and place the crab, diced celery, and minced onion into a large mixing bowl.
  2. In a separate small bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, paprika, salt, and pepper until the mixture is smooth and the paprika is evenly distributed.
  3. Pour the dressing over the crab mixture. Using a rubber spatula, gently fold the ingredients together until the crab is evenly coated and the parsley is incorporated.
