Ingredients:
- 2 cups (450g) cottage cheese
- 3 large (150g) eggs
- 1 ½ cups (180g) superfine almond flour
- ¼ cup (60ml) maple syrup
- 1 tsp (5ml) vanilla extract
- 1 tsp (5g) baking powder
- ½ tsp (2g) ground cinnamon
- ¼ tsp (1.5g) salt
- 1 ½ cups (225g) fresh blueberries
- 1 tbsp (8g) almond flour
Instructions:
- Preheat oven to 350°F (175°C). Grease an 8x8 inch baking dish with coconut oil or line it with parchment paper.
- Combine cottage cheese, eggs, maple syrup, vanilla, 180g almond flour, baking powder, cinnamon, and salt in a blender. Process on high for 30–60 seconds until the mixture is completely smooth.
- Toss the blueberries in 1 tablespoon of almond flour to prevent sinking, then gently fold the berries into the batter using a spatula.
- Pour the batter into the prepared baking dish and smooth the top. Bake for 35–40 minutes until the edges pull away from the sides and the center is set.
- Allow the bake to cool in the pan for 15 minutes before slicing into 9 equal squares.
