Ingredients:

  • 2 cups (450g) cottage cheese
  • 3 large (150g) eggs
  • 1 ½ cups (180g) superfine almond flour
  • ¼ cup (60ml) maple syrup
  • 1 tsp (5ml) vanilla extract
  • 1 tsp (5g) baking powder
  • ½ tsp (2g) ground cinnamon
  • ¼ tsp (1.5g) salt
  • 1 ½ cups (225g) fresh blueberries
  • 1 tbsp (8g) almond flour

Instructions:

  1. Preheat oven to 350°F (175°C). Grease an 8x8 inch baking dish with coconut oil or line it with parchment paper.
  2. Combine cottage cheese, eggs, maple syrup, vanilla, 180g almond flour, baking powder, cinnamon, and salt in a blender. Process on high for 30–60 seconds until the mixture is completely smooth.
  3. Toss the blueberries in 1 tablespoon of almond flour to prevent sinking, then gently fold the berries into the batter using a spatula.
  4. Pour the batter into the prepared baking dish and smooth the top. Bake for 35–40 minutes until the edges pull away from the sides and the center is set.
  5. Allow the bake to cool in the pan for 15 minutes before slicing into 9 equal squares.
