Ingredients:
- 2 cups (200g) super-fine blanched almond flour
- 2 tsp (10g) baking powder
- ½ tsp (3g) sea salt
- 1 tbsp (12g) erythritol or monk fruit sweetener
- 2 large eggs, separated
- ¼ cup (60ml) melted unsalted butter
- ½ cup (120ml) unsweetened almond milk
- 1 tsp (5ml) pure vanilla extract
Instructions:
- In a medium bowl, whisk together the almond flour, baking powder, salt, and sweetener until no clumps remain.
- In a separate larger bowl, beat the egg yolks, melted butter, almond milk, and vanilla extract until smooth.
- Stir the dry ingredients into the wet mixture until just combined.
- In a clean glass bowl, beat the reserved egg whites on high speed until stiff peaks form.
- Gently fold the whipped whites into the batter using a spatula; stop as soon as no large white streaks remain.
- Preheat your waffle iron and grease lightly with butter or oil.
- Pour about ½ cup of batter per waffle. Cook until the steam stops escaping from the sides of the iron and the waffle is golden brown.
