Ingredients:

  • 2 cups (200g) super-fine blanched almond flour
  • 2 tsp (10g) baking powder
  • ½ tsp (3g) sea salt
  • 1 tbsp (12g) erythritol or monk fruit sweetener
  • 2 large eggs, separated
  • ¼ cup (60ml) melted unsalted butter
  • ½ cup (120ml) unsweetened almond milk
  • 1 tsp (5ml) pure vanilla extract

Instructions:

  1. In a medium bowl, whisk together the almond flour, baking powder, salt, and sweetener until no clumps remain.
  2. In a separate larger bowl, beat the egg yolks, melted butter, almond milk, and vanilla extract until smooth.
  3. Stir the dry ingredients into the wet mixture until just combined.
  4. In a clean glass bowl, beat the reserved egg whites on high speed until stiff peaks form.
  5. Gently fold the whipped whites into the batter using a spatula; stop as soon as no large white streaks remain.
  6. Preheat your waffle iron and grease lightly with butter or oil.
  7. Pour about ½ cup of batter per waffle. Cook until the steam stops escaping from the sides of the iron and the waffle is golden brown.
