Ingredients:
- 2 cups (200g) superfine almond flour
- 1/2 tsp (3g) fine sea salt
- 6 tbsp (85g) unsalted butter, chilled and cubed
- 1 large (50g) egg, beaten
- 1 tbsp (15ml) ice-cold water
- 4 large (200g) eggs
- 1 cup (240ml) heavy cream
- 1 cup (115g) shredded Gruyère or Swiss cheese
- 2 cups (150g) fresh spinach, sautéed and squeezed dry
- 1 cup (150g) cooked bacon or ham, diced
- 1/2 tsp (3g) garlic powder
- 1/4 tsp (1g) ground black pepper
- 1/4 tsp (1g) salt
Instructions:
- In a medium bowl, stir together almond flour and salt.
- Cut in the chilled butter using a fork or pastry cutter until the mixture resembles coarse, damp sand.
- Stir in the beaten egg until a dough forms. If too crumbly, add ice water one teaspoon at a time.
- Press the dough evenly into the bottom and up the sides of a 9-inch pie dish.
- Preheat oven to 350°F (175°C). Line the crust with parchment paper and fill with pie weights or dry beans.
- Bake for 10–12 minutes. Remove weights and parchment, then bake for another 5 minutes until edges are pale gold.
- In a bowl, whisk eggs and heavy cream until smooth and slightly frothy.
- Fold in the shredded cheese, sautéed spinach, cooked protein, garlic powder, salt, and pepper.
- Pour the mixture into the pre-baked crust.
- Bake for 25–30 minutes until the edges are set and the center has a slight jiggle.
