Ingredients:

  • 2 cups (200g) superfine almond flour
  • 1/2 tsp (3g) fine sea salt
  • 6 tbsp (85g) unsalted butter, chilled and cubed
  • 1 large (50g) egg, beaten
  • 1 tbsp (15ml) ice-cold water
  • 4 large (200g) eggs
  • 1 cup (240ml) heavy cream
  • 1 cup (115g) shredded Gruyère or Swiss cheese
  • 2 cups (150g) fresh spinach, sautéed and squeezed dry
  • 1 cup (150g) cooked bacon or ham, diced
  • 1/2 tsp (3g) garlic powder
  • 1/4 tsp (1g) ground black pepper
  • 1/4 tsp (1g) salt

Instructions:

  1. In a medium bowl, stir together almond flour and salt.
  2. Cut in the chilled butter using a fork or pastry cutter until the mixture resembles coarse, damp sand.
  3. Stir in the beaten egg until a dough forms. If too crumbly, add ice water one teaspoon at a time.
  4. Press the dough evenly into the bottom and up the sides of a 9-inch pie dish.
  5. Preheat oven to 350°F (175°C). Line the crust with parchment paper and fill with pie weights or dry beans.
  6. Bake for 10–12 minutes. Remove weights and parchment, then bake for another 5 minutes until edges are pale gold.
  7. In a bowl, whisk eggs and heavy cream until smooth and slightly frothy.
  8. Fold in the shredded cheese, sautéed spinach, cooked protein, garlic powder, salt, and pepper.
  9. Pour the mixture into the pre-baked crust.
  10. Bake for 25–30 minutes until the edges are set and the center has a slight jiggle.
