Ingredients:
- 1/2 cup (50g) superfine almond flour
- 3 tbsp (35g) coconut sugar
- 1 tsp (2g) ground cinnamon
- 2 tbsp (28g) melted coconut oil
- 2 1/2 cups (250g) superfine almond flour
- 1 tsp (4g) baking powder
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) fine sea salt
- 3 large (150g) eggs
- 1/3 cup (80ml) maple syrup
- 1/2 cup (120g) sour cream
- 1 tsp (5ml) pure vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C) and grease an 8-inch square baking pan with parchment paper.
- In a small bowl, whisk together 50g almond flour, coconut sugar, and cinnamon.
- Stir in the melted coconut oil until the mixture resembles wet sand with small clumps. Set aside.
- In a large bowl, beat the eggs and maple syrup until the mixture is pale and slightly frothy.
- Stir in the sour cream and vanilla extract until smooth.
- In a separate bowl, sift together 250g almond flour, baking powder, baking soda, and salt to remove any lumps.
- Gradually fold the dry ingredients into the wet batter, stirring just until combined.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Evenly sprinkle the cinnamon crumble across the surface, pressing very lightly so the topping adheres.
- Bake for 35-40 minutes, or until the edges are mahogany-colored and a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 15 minutes before slicing.
