Ingredients:

  • 2 cups (236g) almond flour
  • 1/2 tsp (3g) baking soda
  • 1/4 tsp (1.5g) sea salt
  • 1/3 cup (80ml) coconut oil, softened
  • 1/3 cup (65g) coconut sugar
  • 1 large (50g) egg
  • 1 tsp (5ml) vanilla extract
  • 3/4 cup (130g) dark chocolate chips
  • 1 pinch (0.5g) sea salt

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the almond flour, baking soda, and salt in a large bowl until no clumps remain.
  3. Cream the softened coconut oil and coconut sugar in a separate bowl until a smooth paste forms.
  4. Beat in the egg and vanilla extract until the mixture looks glossy.
  5. Stir the dry ingredients into the wet mixture with a spatula until a thick dough forms.
  6. Fold in the dark chocolate chips gently.
  7. Scoop 2 tablespoons of dough and roll into balls.
  8. Place balls on the parchment sheet and press down slightly with your palm to create a thick disc.
  9. Bake for 10–12 minutes until edges are light mahogany color and centers are soft.
  10. Sprinkle with flaky sea salt immediately after removing from the oven.
  11. Rest the cookies on the hot pan for 5–10 minutes to set.
