Ingredients:
- 2 cups (236g) almond flour
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) sea salt
- 1/3 cup (80ml) coconut oil, softened
- 1/3 cup (65g) coconut sugar
- 1 large (50g) egg
- 1 tsp (5ml) vanilla extract
- 3/4 cup (130g) dark chocolate chips
- 1 pinch (0.5g) sea salt
Instructions:
- Preheat your oven to 350°F (175°C).
- Whisk together the almond flour, baking soda, and salt in a large bowl until no clumps remain.
- Cream the softened coconut oil and coconut sugar in a separate bowl until a smooth paste forms.
- Beat in the egg and vanilla extract until the mixture looks glossy.
- Stir the dry ingredients into the wet mixture with a spatula until a thick dough forms.
- Fold in the dark chocolate chips gently.
- Scoop 2 tablespoons of dough and roll into balls.
- Place balls on the parchment sheet and press down slightly with your palm to create a thick disc.
- Bake for 10–12 minutes until edges are light mahogany color and centers are soft.
- Sprinkle with flaky sea salt immediately after removing from the oven.
- Rest the cookies on the hot pan for 5–10 minutes to set.
