Ingredients:
- 1 cup (250g) creamy almond butter
- 3/4 cup (150g) packed brown sugar
- 1 large (50g) egg
- 1 tsp (5ml) vanilla extract
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) sea salt
- 3/4 cup (130g) semi-sweet chocolate chips
Instructions:
- In a large mixing bowl, combine the almond butter and brown sugar. Stir vigorously until the mixture is smooth and the sugar has mostly incorporated.
- Add the room-temperature egg and vanilla extract, beating until the batter looks glossy and cohesive.
- Sift in the baking soda and sea salt. Fold these into the batter using a spatula until no white streaks of soda remain.
- Gently stir in the chocolate chips, ensuring they are evenly distributed throughout the thick dough.
- Preheat your oven to 350°F (175°C).
- Scoop rounded tablespoons of dough onto a lined baking sheet, spacing them 2 inches apart.
- Bake for 10–12 minutes. Remove them when the edges are set and a light golden brown, but the centers still look slightly underbaked.
