Ingredients:

  • 2 cups (250g) self-rising flour
  • 1 cup (245g) plain non-fat Greek yogurt
  • 1 large egg, beaten (optional, for wash and binding)
  • 1 tbsp everything bagel seasoning (optional, for topping)

Instructions:

  1. Preheat your oven to 375°F (190°C). In a large mixing bowl, combine the self-rising flour and Greek yogurt.
  2. Using a spatula, fold the ingredients together until a shaggy dough forms and no dry pockets of flour remain.
  3. Turn the dough onto a lightly floured surface. Fold it over itself 3–4 times to shape into a rough log or boule, being careful not to over-knead.
  4. Transfer the dough to a parchment-lined 8.5 x 4.5 loaf pan. Brush the top with the beaten egg wash and sprinkle with everything bagel seasoning.
  5. Bake for 30–35 minutes until the exterior is deep golden-brown and the loaf sounds hollow when tapped.
  6. Let the bread cool for at least 15 minutes before slicing to allow the internal steam to set the crumb structure.
